Chef and restaurateur Tim Love’s Lonesome Dove Western Bistro is more than a fine dining destination in Texas—it’s also a hub of culinary creativity. Situated in the Forth Worth Stockyards, in a city known as “Where the West Begins,” the restaurant serves up urban Western dishes, pairing wild game with rich flavors like the popular rabbit-rattlesnake sausage with crème fraîche, kangaroo nachos with a fig-habanero demi-glace, and rabbit ravioli with jalapeño-foie gras sausage.

Inside the restaurant, which opened in 2020, there’s a long, gleaming bar frequented by patrons in cowboy hats, offset by white-tablecloth dining tables with mood lighting. Through the far door is a partially shaded outdoor dining space with tables set beneath the trees and twinkling lights, as well as a fire pit surrounded by Adirondack chairs for chilly evenings. There’s also an open-air veranda overlooking the historic Marine Creek river walk that guests can book for events.

Lonesome Dove has two more locations in Austin and Knoxville, Tennessee, joining Love’s considerable repertoire of restaurants. The chef, who has appeared on Food Network’s Iron Chef America and NBC’s The Today Show, draws inspiration from global travels and infuses innovation into his dishes at Lonesome Dove, with a personal slogan of “All In” (and a signature tequila, pineapple, and lime shot of the same name). Guests enjoy unique and sophisticated options like blue corn and lobster hushpuppies and elk sliders with blueberry jam.

The Forth Worth location turns 25 years old in 2025 and is celebrating with a retrospective 25-course tasting menu ($250/person) available May 2 through May 6. The menu leads guests through Sea, Air, Land, Beef, and Sweets, each section with its own (optional) wine pairing. Standouts include the sweet-heat squid taco with blue corn masa and Fresno chile, the silky foie gras cappuccino topped with orange foam, the luxurious snow-aged wagyu steak and mole, and the indulgently rich ancho chile chocolate cake with sweet red pepper cream.

Reservations for the 25th anniversary tasting menu are open.
