Filet Beans with Georgia Shrimp and Citrus

Serves 6-8

    Ingredients
  • 1 pound filet beans, ends trimmed
  • 16 medium shrimp (about 8 ounces), peeled
  • Citrus marinade (recipe follows)
  • 12 orange segments
  • Salt to taste
  • Citrus Marinade
  • 1 small shallot, minced
  • 1 small garlic clove, minced
  • 1 teaspoon orange zest
  • 2 tablespoons freshly squeezed orange juice
  • 4 tablespoons champagne vinegar
  • ½ teaspoon crushed red pepper
  • 1 teaspoon minced parsley
  • 6 tablespoons olive oil
  • 1 teaspoon salt

  1. Bring a large pot of salted water to a boil. Prepare an ice bath. Add filet beans to boiling water and cook for about 1 minute, until tender. Use a slotted spoon to remove beans from boiling water and transfer to ice bath.
  2. When water returns to a boil, add shrimp and cook until just done, about 45 seconds, then remove from boiling water and add to ice bath. Drain beans and shrimp.
  3. Slice shrimp in half lengthwise. In a mixing bowl, toss beans and shrimp with citrus marinade and orange segments. Season with salt to taste. Let sit a few hours before serving.

Citrus Marinade

Add all ingredients to a bowl and whisk  to emulsify.
