Fills a one-gallon container

    Ingredients
  • ⅓ cup Diamond Crystal kosher salt
  • 2 teaspoons coarsely ground pepper
  • 4 cups water
  • 4 cups distilled white vinegar
  • 3 pounds pickling cucumbers washed and quartered
  • 1 yellow onion, peeled halved and cut into crescents
  • 4 garlic cloves peeled and quartered

In a gallon container, combine salt, pepper, water, and vinegar and stir briskly to dissolve salt. Add cucumbers, onion, and garlic. Cover and refrigerate.
