Jerk Sweet Potatoes

Ingredients

1 tablespoon allspice

¼ teaspoon ground cinnamon

¼ cup light brown sugar

1 teaspoon red pepper flakes

¼ teaspoon ground cloves

¼ teaspoon ground cumin

2 teaspoons salt

1 teaspoon freshly ground black pepper

½ cup butter, melted

3 large sweet potatoes,
peeled and diced into 1-inch cubes

Directions

  1. Preheat oven to 350 degrees.
  2. Mix together all ingredients except potatoes to make jerk seasoning.
  3. Toss sweet potatoes in spice mixture and place in roasting pan.
  4. Roast for 20 minutes or until tender, turning potatoes every 5 minutes to ensure even cooking and even caramelization.
  5. Remove from oven and serve warm.
