    ingredients
  • Mango Sticky Rice Smash
  • ½ cup sticky rice (recipe follows)
  • 1 rice crispie treat (recipe follows)
  • ½ cup custard (recipe follows)
  • ¾ cup ripe mango, diced
  • Sticky Rice
  • 2 cups glutinous rice (can substitute jasmine rice)
  • 4 cups water
  • Rice Crispy Treat
  • 1 bag marshmallows
  • ¼ cup butter
  • 1 tablespoon red chili flakes
  • 8 cups rice cereal
  • Sticky Rice Custard
  • 4 cups coconut milk
  • 2 cups sugar
  • 1 teaspoon salt
  • 2 pandan leaves

Sticky Rice

  1. Combine rice and water. Soak for 8 hours.
  2. Drain rice and steam in bamboo basket for 15 to 20 minutes over low heat.

Rice Crispy Treat

  1. Melt marshmallows and butter in large pot over low heat.
  2. Add chili flakes and rice cereal and stir until coated.
  3. Spray sheet pan with non-stick spray and spread mixture evenly onto pan. Allow to cool, then cut into circles using 3-inch cutter.

Sticky Rice Custard

  1. Combine all ingredients in large saucepan over medium heat. Bring to boil, stirring frequently.
  2. Remove custard from heat, cover and chill.

To Assemble

Make a sticky rice “pattie.” Lay rice crispy treat on top, pour custard over rice crispy treat, and add chopped mango. Smash it all together and enjoy! Repeat for remaining servings.
