Salade de Radis
(Radish Salad)



1 pound radishes, cut into bite-sized pieces

1 handful basil, torn by hand or chiffonade

Sea salt

2 1/2 ounces shredded Parmesan cheese

2 tablespoons lemon juice

3 tablespoons extra virgin olive oil

2 handfuls arugula


  1. Combine radishes with basil and salt, mix for 30 seconds to incorporate.
  2. Add cheese and continue to mix until Parmesan starts to get creamy, about 1 minute.
  3. Add lemon juice, oil, and arugula. Mix well.
