Pumpkin Flip


Pumpkin Spice Mix

1 quart pumpkin purée

3/4 quarts sugar

1 ounce lemon juice

2 cracked whole nutmegs

4 cinnamon sticks

1/4 cup peeled ginger

1/2 tablespoon ground cloves


2 ounces bourbon (Woodford Reserve recommended)

Thyme Foam

3 ounces thyme simple syrup

3 ounces egg whites


Pumpkin Spice Mix

  1. Combine all ingredients in a pot over medium-low heat and bring to a boil.
  2. Remove from heat and cool before straining through a chinois strainer.

Thyme Foam

  1. Combine the simple syrup and egg whites in a shaker tin and shake vigorously.

Pumpkin Flip Directions

  1. Mix the pumpkin spice mix and bourbon in a shaker tin filled with ice.
  2. Shake and strain into a coupe glass.
  3. Top cocktail with thyme foam and garnish with grated nutmeg.
