This is another classic we tweaked slightly to take it to the next level. My wife and I got married on St. John; we fell in love with these drinks while there. We got home and thought, how do we make it better? I hate the idea of doing things just because they have always been done a certain way. With the dark and stormy, everybody thinks you have to use Gosling’s and then crack a can of ginger beer and…presto. But I prefer using Cruzan Black Strap rum; it has all these undertones of winter spices. We make our ginger beer from scratch at Dogwood, but I recommend Fever Tree or Mine Root for the home bartender.

 

  1. Pour 2 ounces over ice Cruzan Black Strap and top with ginger beer.
  2. Garnish with lime wedge and candied ginger. Presto.
