Aguachile

This aguachile recipe is a fan favorite at Jalisco Taqueria and Tequila. It’s light and refreshing cold soup that is wonderful to cool off on a hot summer day. The best part is that it’s easy to make with 6 ingredients and a food processor.

    ingredients
  • ½ cup lime juice
  • 2 cucumbers
  • 1 peeled
  • 1 serrano pepper
  • 1 garlic clove
  • ½ bunch cilantro, plus more
  • Salt, to taste
  • 2 radishes,
  • julienned
  • 1 red onion
  • julienned
steps
  1. In a blender, combine lime juice, one cucumber, pepper, garlic, and ½ bunch of cilantro, reserving the remaining ingredients. Blend until semi-smooth, and salt to taste.
  2. Thinly slice remaining cucumber. Garnish soup with cucumber slices, radish, red onion, and reserved cilantro.
