Serves 6 to 8
6 chicken leg quarters
½ cup soy sauce
¼ cup kalamansi juice
3-4 stalks lemongrass (tanglad), smashed and cut into 4 pieces each (about ½ cup)
1 red onion, diced
2 tablespoons chopped garlic
2 tablespoons minced ginger
5 bunches scallion, cut into 2-inch lengths
1 tablespoon brown sugar
1 tablespoon salt
1 teaspoon black pepper

- In an oven-safe dish, combine all ingredients plus 2 cups of water. Marinate for 8 to 12 hours.
- Preheat oven to 375 degrees. Cook chicken for 20 minutes, rotating dish halfway through.
- Increase heat to broil and cook chicken 5 minutes more to char.
