Chicken Inasal

Note: Chicken will need to marinate for 8 to 12 hours.

Serves 6 to 8

    Ingredients
  • 6 chicken leg quarters
  • ½ cup soy sauce
  • ¼ cup kalamansi juice
  • 3-4 stalks lemongrass (tanglad), smashed and cut into 4 pieces each (about ½ cup)
  • 1 red onion, diced
  • 2 tablespoons chopped garlic
  • 2 tablespoons minced ginger
  • 5 bunches scallion, cut into 2-inch lengths
  • 1 tablespoon brown sugar
  • 1 tablespoon salt
  • 1 teaspoon black pepper
steps
  1. In an oven-safe dish, combine all ingredients plus 2 cups of water. Marinate for 8 to 12 hours.
  2. Preheat oven to 375 degrees. Cook chicken for 20 minutes, rotating dish halfway through.
  3. Increase heat to broil and cook chicken 5 minutes more to char.
