Crispy Garlic Chicken Bites

Every day, as we prep the kitchen for service, we have scrap chicken. Instead of wasting these tiny bits of meat, we make ourselves this snack instead. You can easily make this, too, with the boneless, skinless chicken thighs that have been sitting in your freezer awaiting inspiration to strike. This dish is essentially a savory chicken nugget bite, like my Thai take on Japanese karaage. We have a bowl of this stuff during service for anyone who needs some added pep in their step. The sauce gets really caramelized in the fryer, which annoyingly turns the oil black, but the satisfying bite is worth it.
