This duck fat gravy is so good that it made our most popular recipe from 2021 to go with any meal. This recipe comes from the Tattooed Moose in Charleston. Follow the lead of the Moose and serve it with crispy fries. Or, pour it on some creamy mash potatoes and turkey.
¼ pound rendered duck fat
½ cup red onion, diced
3 tablespoons garlic, diced
2 cups warm chicken or duck stock
2 tablespoons flour
1 tablespoon heavy cream
Salt and pepper to taste
In a skillet, cook onions and garlic in duck fat over medium heat until translucent. Whisk in flour and cook until light brown over medium low heat. Add stock and heavy cream and let simmer until gravy is a desired thickness. Season with salt and pepper to taste.
