Grapefruit Collins

Gin, simple syrup, grapefruit make this acidic cocktail a sweet and refreshing choice for any time of the year.

Makes 1 cocktail

  • 2 ounces Hayman’s Royal Dock gin
  • 1/2 ounce simple syrup
  • 1/2 ounce lemon juice
  • 1/2 ounce grapefruit juice
  • 2 dashes grapefruit bitters
  • Soda water
  1. Add all ingredients to a cocktail shaker with ice. Shake, then strain over pebble ice in a Collins glass. Top with soda water.
