Green Lima Beans and Sesame Seed Sauté

Serves 8 to 10

    Ingredients

  • 2 tablespoons oil
  • 2 teaspoons mustard seed
  • ¼ cup sesame seeds
  • 1 inch piece ginger, minced
  • 2 tablespoons minced garlic
  • 4 cups fresh (or frozen) baby lima beans
  • 4 cups fresh (or frozen) lima bean pods, destrung and cut into ½-inch pieces
  • ½ teaspoon turmeric
  • Salt to taste
  • 1 cup water
  • Juice of 1 small lemon
  • 1 teaspoon brown sugar

In a wide, heavy-bottomed pan with a lid, heat oil over medium-high heat until shimmering. Add mustard seed and cook until they begin popping. Add sesame seeds, ginger, and garlic. Lower heat to medium and stir until sesame seeds are golden brown and garlic and ginger are very fragrant, being careful not to let them burn. Add beans, pods, turmeric, salt, and 1 cup water. Stir well to mix. Cook, covered, for 8 to 10 minutes. Stir in lemon juice and brown sugar, then simmer for 2 to 3 more minutes. Adjust seasoning to taste and serve.
