Fills a one-gallon container
⅓ cup Diamond Crystal kosher salt
2 teaspoons coarsely ground pepper
4 cups water
4 cups distilled white vinegar
3 pounds pickling cucumbers washed and quartered
1 yellow onion, peeled halved and cut into crescents
4 garlic cloves peeled and quartered

In a gallon container, combine salt, pepper, water, and vinegar and stir briskly to dissolve salt. Add cucumbers, onion, and garlic. Cover and refrigerate.
