Hilda’s Icebox Pickles


⅓ cup Diamond Crystal kosher salt

2 teaspoons coarsely ground pepper

4 cups water

4 cups distilled white vinegar

3 pounds pickling cucumbers, washed and quartered

1 yellow onion, peeled, halved and cut into crescents

4 garlic cloves, peeled and quartered


In a gallon container, combine salt, pepper, water, and vinegar and stir briskly to dissolve salt. Add cucumbers, onion, and garlic. Cover and refrigerate.
