¼ teaspoon ground cinnamon
¼ cup light brown sugar
1 teaspoon red pepper flakes
¼ teaspoon ground cloves
¼ teaspoon ground cumin
2 teaspoons salt,1 teaspoon freshly ground black pepper
½ cup butter, melted
3 large sweet potatoes,
peeled and diced into 1-inch cubes

- Preheat oven to 350 degrees. Make jerk seasoning by mixing together all ingredients except potatoes. Toss sweet potatoes in spice mixture and place in roasting pan.
- Roast in oven for 20 minutes or until tender, turning potatoes every 5 minutes to ensure even cooking and even caramelization. Remove from oven and serve warm.
