Nina Compton loves sweet potatoes, and jerk spice complement them nicely because the potatoes are sweet, starchy, and creamy. “The dish is familiar, but still a bit different; a great addition to a holiday table,” she says.

    Ingredients
  • 1 tablespoon allspice
  • ¼ teaspoon ground cinnamon
  • ¼ cup light brown sugar
  • 1 teaspoon red pepper flakes
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground cumin
  • 2 teaspoons salt,1 teaspoon freshly ground black pepper
  • ½ cup butter, melted
  • 3 large sweet potatoes,
  • peeled and diced into 1-inch cubes
steps
  1. Preheat oven to 350 degrees. Make jerk seasoning by mixing together all ingredients except potatoes. Toss sweet potatoes in spice mixture and place in roasting pan.
  2. Roast in oven for 20 minutes or until tender, turning potatoes every 5 minutes to ensure even cooking and even caramelization. Remove from oven and serve warm.
