Need something quick and easy to fill you up while you watch the tournament? This Pimento Cheese Sandwich recipe can carry its weight, it’s a classic for a reason. This is the sandwich for people who don’t have time for all the add-ons and just need something fast and delicious.

Makes 4 sandwiches


  • 3 cups shredded white cheddar cheese
  • 2 cups shredded yellow sharp cheddar cheese
  • 4 ounces crumbled blue cheese
  • 1 cup shredded Parmesan cheese
  • 1 (4-ounce) jar sliced pimentos, drained
  • 1 cup light mayo
  • 2 tablespoons dijon mustard
  • 1 loaf of white bread

Combine cheeses, pimentos, mayo, and mustard in a food processor and process until smooth. Cover and chill. Spread on bread slices.
