  • 1 tablespoon red wine
  • 5 tablespoons good-quality red wine vinegar
  • 2 tablespoons black pepper finely ground but not turned into dust
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons shallots

Combine all the ingredients and let sit for at least a few hours. This is a good chance to use a very high-quality red wine vinegar, as it really makes a difference.
