Oyster Mignonette


1 tablespoon red wine

5 tablespoons good-quality red wine vinegar

2 tablespoons black pepper, finely ground but not turned into dust

1 teaspoon salt

1 tablespoon sugar

2 tablespoons shallots


Combine all the ingredients and let sit for at least a few hours. This is a good chance to use a very high-quality red wine vinegar, as it really makes a difference.
