Pig Ear Sandwiches

The pig ear sandwiches are made in a pressure cooker, and the sausage, which turns bright red when cooked, comes from the Mississippi producer Red Rose just like Geno Lee’s family had done for generations before him.

Makes 10 sliders

    For the Hot Sauce
  • makes about 1 1/2 cup
  • 2 slider buns
  • 2 tablespoons cayenne pepper
  • For the sandwiches
  • 5 pig ears
  • ½ teaspoon salt
  • 10 slider buns
  • ¼ cup mustard
  • ½ cup shredded cabbage
  • Hot Sauce
  • special equipment: Pressure cooker

Make the Hot Sauce:

  1. In a small saucepot, combine buns and 1 cup water. Use your hands to mix bread and water together.
  2. Add cayenne pepper. Cook mixture over medium-low heat for about 15 minutes, stirring often. Sauce will thicken slightly. 

Make the Sandwich:

  1. Cut each pig ear in half and place in pressure cooker. Add 1 cup of water and salt. Turn on machine. Once pressure builds up, turn off cooker and let pressure come down. (This should take about 30 minutes.) 
  2. Meanwhile, lightly toast slider buns in a toaster oven or on a griddle. Mix mustard with ½ cup water.
  3. Remove ears from pressure cooker and place ½ ear on the bottom of each slider bun, folding the ear as necessary. Top each sandwich with cabbage and a dollop of mustard sauce. Add desired amount of hot sauce before serving.
