The pumpkin flip seasonal cocktail from ilili in Washington, DC is “an homage and a seasonal interpretation of a porto flip, a classic cocktail to welcome the fall season,” creator Rachid Hdouche says.
Sweet but balanced, this pumpkin-spiced cocktail calls memories of fall baking with hints of nutmeg, cinnamon, thyme, and ginger. Its nod to fall flavors go well beyond pumpkin spice, and it gets topped with a thyme foam finish.

1 quart pumpkin purée
¾ quart sugar
1 ounce lemon juice
2 nutmeg, whole, cracked
4 cinnamon sticks
¼ cup peeled ginger
½ tablespoon ground cloves
2 ounces Woodford Reserve bourbon
3 ounces thyme simple syrup
3 ounces egg whites

Make the Pumpkin Spice Mix
- Combine all ingredients in a pot over medium-low heat and bring to a boil.
- Remove from heat and cool before straining through a chinois strainer.
Make the Thyme Foam
- Combine the simple syrup and egg whites in a shaker tin and shake vigorously.
Make the Cocktail
- Mix the pumpkin spice mix and bourbon in a shaker tin filled with ice.
- Shake and strain into a coupe glass.
- Top cocktail with thyme foam and garnish with grated nutmeg.
