1 pound hen of the woods (maitake) mushrooms
3 tablespoons olive oil
1 cup chicken stock
1 teaspoon butter
1 teaspoon chopped parsley
- Preheat oven to 350 degrees. Break mushrooms into smaller pieces and place in a roasting pan. Coat mushrooms in oil and salt. Place in oven and roast until dark brown around the edges and cooked through, 15 to 20 minutes.
- Remove pan from the oven and place on top of stove. Add stock to pan, bring to a boil, andreduce stock to a glaze. Add butter and parsley, adjust seasoning, and serve
