Serves 4

  • 1 pound hen of the woods (maitake) mushrooms
  • 3 tablespoons olive oil
  • Kosher salt
  • 1 cup chicken stock
  • 1 teaspoon butter
  • 1 teaspoon chopped parsley
  1. Preheat oven to 350 degrees. Break mushrooms into smaller pieces and place in a roasting pan. Coat mushrooms in oil and salt. Place in oven and roast until dark brown around the edges and cooked through, 15 to 20 minutes.
  2. Remove pan from the oven and place on top of stove. Add stock to pan, bring to a boil, andreduce stock to a glaze. Add butter and parsley, adjust seasoning, and serve
