Salade de Radis
(Radish Salad)



1 pound radishes, cut into bite-sized pieces

1 handful basil, torn by hand

Sea salt

2½ ounces shredded Parmesan cheese

2 tablespoons lemon juice

3 tablespoons extra virgin olive oil

2 handfuls arugula


  1. In a bowl, combine radishes with basil and salt, mixing to incorporate. Add Parmesan and continue to mix until it starts to get creamy, about 1 minute. Add lemon juice, oil, and arugula. Mix well.
