Salade de Radis (Radish Salad)

  • 1 pound radishes
  • cut into bite-sized pieces
  • 1 handful basil
  • torn by hand
  • Sea salt
  • 2½ ounces shredded Parmesan cheese
  • 2 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • 2 handfuls arugula
  1. In a bowl, combine radishes with basil and salt, mixing to incorporate. Add Parmesan and continue to mix until it starts to get creamy, about 1 minute. Add lemon juice, oil, and arugula. Mix well.
