1 cup fresh mint leaves, plus more for garnish
2 Meyer lemons, juiced and then quartered
1 tablespoon sugar
3 cups Kentucky bourbon
½ cup strawberry jam
In the bottom of a large jar, muddle mint leaves and spent lemon quarters with the sugar and salt until they begin to break down. Add the lemon juice and bourbon and stir well. Strain into a pitcher and then stir in jam. Add additional mint and lemons to pitcher for garnish. Pour into high-ball glasses filled with crushed ice and top with club soda.
