Serves 6 to 8 generously
1 bag frozen tater tots
1 (10.5-ounce) can cream of
mushroom soup
2 cups full-fat sour cream
1 (10-ounce) can Rotel tomatoes
2 1⁄2 teaspoons Cajun seasoning (Botello suggests Slap Ya Mama)
1 cup diced white onion
1 cup diced rendered bacon
6 cups shredded cheddar, divided 1 (6-ounce) package French’s Fried Onions

- Preheat oven according to directions on tater tot package. Bake tater tots per directions. In a large bowl, mix cooked tots with soup, sour cream, Rotel, Cajun seasoning, onion, and bacon.
- Adjust oven temperature to 350 degrees. Add 4 cups shredded cheddar to mixture and stir to combine. Scoop into a 9-by-13-inch casserole dish and spread into an even layer, baking until gooey and bubbly, about 40 minutes.
- Top casserole with remaining 2 cups cheese and bake for an additional 15 minutes, switching to the broiler for the last 5 minutes or so for a golden-brown top.
- Sprinkle crushed fried onions on top and let cool slightly, allowing casserole to set for that perfect first bite.
