1 cocktail

  • 1½ ounces Tullamore Dew Irish Whisky
  • ½ Campari liqueur
  • ½ ounce lemon-thyme syrup*
  • Lemon-Thyme Syrup
  • 2 lemon peels
  • 1 teaspoon lemon extract
  • 1 bunch of fresh thyme
  • 1 cup sugar,1 cup water

Lemon-Thyme Syrup

  1. In a medium saucepan, bring syrup ingredients to a boil.
  2. Turn down to a simmer, stirring often until mixture thickens and the sugar has melted.
  3. Cook for 20 minutes on low heat.
  4. Remove from heat and strain through a fine-mesh sieve into a medium bowl; discard solids.
  5. Let cool completely. Syrup can be stored, covered, in refrigerator up to 2 weeks.


  1. Pour all ingredients into a cocktail shaker.
  2. Shake and strain over a large ice cube into a cocktail glass and garnish with a sprig of thyme.
