The Baby Bird made at Tiki TNT gets its fun pink color from Aperol and pineapple juice

This tart, fruit-forward cocktail is an easy sipper they make at Tiki TNT in Washington DC. They make it with their own green spiced rum, created by Tiki TNT’s owner Todd Thrasher. However, another spiced rum (or any rum) in its place will also work well.

Thrasher makes the green spiced rum and other styles in  his urban distillery on DC’s Historic Wharf. He pulls on inspiration from his travels throughout the Pacific Rim and the Caribbean to craft his rums, which include a gold rum, spiced, green-spiced (used in this recipe), coconut, white, and a relaxed rum (their highest proof offering).

    Ingredients
  • 1½ ounce Thrasher’s Green Spiced Rum (or other available rum)
  • ¾ ounce Aperol (or Campari, if Aperol unavailable)
  • ½ ounce simple syrup
  • 1½ ounce pineapple juice
  • ½ ounce lime juice

In a cocktail tin filled with ice, combine all ingredients and shake vigorously. Strain over fresh ice in a rocks glass.
