1½ ounces Hayman’s Old Tom Gin
½ ounce Dolin dry vermouth
¼ ounce absinthe
½ ounce fresh lemon juice
¼ ounce gomme syrup
Grapefruit peel for garnish

Combine all ingredients in a cocktail tin, shake, and double strain into a rocks glass over an extra-large cube or ice ball. Garnish with a grapefruit peel.
