Makes 24 eggs
12 hard-boiled eggs, halved, whites and yolks separated
8 tablespoons mayonnaise
1 tablespoon dijon mustard
1 tablespoon wasabi powder or 2 teaspoons wasabi paste
2 teaspoons apple cider vinegar
Salt and freshly ground black pepper to taste

- In a large bowl, mix egg yolks with mayonnaise, mustard, wasabi, vinegar, and salt and pepper. With a fork, mash together yolks and seasonings and mix until you get a smooth paste.
- Pipe egg yolk mixture into white halves. Garnish with a sprinkle of paprika.
