Benton’s Bacon and Bleu Cheese Biscuit with Cajun Butter



2 strips Benton's bacon

2 cups all-purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

2 tablespoons Cajun seasoning, divided

4 tablespoons vegetable shortening

⅓ cup blue cheese crumbles

1 cup Cruze Dairy Farm buttermilk

½ stick softened butter


  1. Preheat oven to 450 degrees.
  2. Cook bacon in skillet to desired crispness. Drain and chop.
  3. In a mixing bowl, stir together flour, baking powder, baking soda, and 1 tablespoon Cajun seasoning. Cut in shortening. Add bacon and blue cheese. Mix in buttermilk until a sticky dough forms.
  4. Turn out onto floured surface and knead until dough comes together. Roll out to ½ inch thick and cut with 2½-inch cutter.
  5. Bake at 450 degrees for 12−15 minutes.
  6. Mix remaining Cajun seasoning into softened butter and brush over biscuits when just out of oven.
