Discover why oysters are a keystone species of Chesapeake Bay through this comprehensive 2.5-hour adventure at The Tides Inn. Guided by the resort’s expert ecologist Will Smiley, guests explore the bay’s ecology while learning hands-on oyster cultivation techniques alongside local families. The experience includes boarding a traditional waterman’s boat to visit working oyster farms, where participants pull up oyster cages and investigate the marine ecosystem. Upon returning to shore, guests master the art of “grading” oysters and witness a waterman’s grill demonstration, all while enjoying local wine or beer. Limited to six people, this intimate experience accommodates children of all ages and provides deep insight into sustainable aquaculture practices.

Wild Dunes Resort, Shuck & Savor: A Lowcountry Experience
Isle of Palms, South Carolina
Embark on a journey through the world of East Coast oysters with this 45-minute to one-hour tasting adventure led by the resort’s chef de cuisine Austin Blake. Guests discover seasonal varieties sourced from local waters and regions stretching from Virginia to Canada. The hands-on experience teaches proper shucking techniques and safety while pairing each oyster with carefully selected wines that highlight their individual characteristics. The intimate journey features multiple courses and a nod to the resort’s Oystercatcher menu with a special baked oyster finale. Participants leave with detailed printouts, new skills, and the confidence to continue their oyster adventures at home.

Experience Gulf Coast oyster culture through an elegant culinary lens at Chemin à la Mer, the Four Seasons’ fifth-floor riverfront restaurant overlooking the Mississippi River. Partner-chef Donald Link takes you on a guided flight of East, West, and Gulf Coast oysters paired with beverages curated by the restaurant’s sommelier. This one-hour experience showcases the distinct characteristics of oysters from different regions while exploring how various wines and spirits complement their unique flavors with the team curating classic pairings including Champagne, sparkling wines, mineral-driven whites, and crisp rosés. Guests also leave with a signed cookbook from Link.
