Blackberry Beret


2 ounces blackberry basil syrup (recipe follows)

½ ounce lime juice

Ginger beer

Club soda

Garnish: blackberries


Fill hurricane glass with crushed ice. Add syrup and lime. Fill glass ¾ with ginger beer. Top with soda. Garnish with 2 blackberries.

Blackberry Basil Syrup

2 cups blackberries
2 cups demerara sugar
3 cups water
2 cups basil

In a sauce pan, muddle blackberries. Add water and sugar, then bring to a boil. Turn down heat and simmer for 5 minutes. Turn off heat, add basil, then cover. Let steep for 10 minutes. Strain all ingredients out of mixture. Can be stored in refrigerator for one week.
