Makes one mocktail
2 cups blackberries
2 cups demerara sugar
3 cups water
2 cups basil
2 ounces blackberry basil syrup
½ ounce lime juice
Ginger beer
Club soda
Garnish: blackberries

Make the blackberry basil syrup
- In a sauce pan, muddle blackberries.
- Add water and sugar, then bring to a boil.
- Turn down heat and simmer for 5 minutes.
- Turn off heat, add basil, then cover.
- Let steep for 10 minutes. Strain all ingredients out of mixture.
- Can be stored in refrigerator for one week.
Make the mocktail
- Fill hurricane glass with crushed ice.
- Add syrup and lime.
- Fill glass ¾ with ginger beer.
- Top with soda. Garnish with 2 blackberries.
