
Ingredients
1½ ounces Rhubarb
+ Cardamom Shrub (recipe follows)
1½ ounces Strange Monkey Gin
Club soda
Splash lemon juice
Lemon twist for garnish
Rhubarb + Cardamom Shrub
4 cups diced rhubarb
2 cups sugar
2 cups apple cider vinegar
5 cardamom pods, cracked
Directions
- Fill an old fashioned glass with ice and layer shrub and gin.
- Top with club soda and splash of lemon juice.
- Garnish with lemon twist.
- Place rhubarb and sugar in bowl and allow to macerate for 48 hours.
- In pot, place rhubarb mixture, vinegar, and cardamom pods and bring to boil then reduce heat and simmer for 15 minutes.
- Remove from heat, strain, and allow to cool before use. Will keep up to two weeks.
