Red Pump Cocktail

1 cocktail

  • 1½ ounces Rhubarb + Cardamom Shrub (recipe follows)
  • 1½ ounces Strange Monkey Gin
  • Club soda
  • Splash lemon juice
  • Lemon twist for garnish
  • Rhubarb + Cardamom Shrub
  • 4 cups diced rhubarb
  • 2 cups sugar
  • 2 cups apple cider vinegar
  • 5 cardamom pods, cracked
  1. Fill an old fashioned glass with ice and layer shrub and gin.
  2. Top with club soda and splash of lemon juice.
  3. Garnish with lemon twist.

Rhubarb + Cardamom Shrub

  1. Place rhubarb and sugar in bowl and allow to macerate for 48 hours.
  2. In pot, place rhubarb mixture, vinegar, and cardamom pods and bring to boil then reduce heat and simmer for 15 minutes.
  3. Remove from heat, strain, and allow to cool before use. Will keep up to two weeks.
