This aguachile recipe is a fan favorite at Jalisco Taqueria and Tequila. It’s light and refreshing cold soup that is wonderful to cool off on a hot summer day. The best part is that it’s easy to make with 6 ingredients and a food processor.

1 bowl
½ cup lime juice
2 cucumbers
1 peeled
1 serrano pepper
1 garlic clove
½ bunch cilantro, plus more
Salt, to taste
2 radishes,
julienned
1 red onion
julienned

- In a blender, combine lime juice, one cucumber, pepper, garlic, and ½ bunch of cilantro, reserving the remaining ingredients. Blend until semi-smooth, and salt to taste.
- Thinly slice remaining cucumber. Garnish soup with cucumber slices, radish, red onion, and reserved cilantro.
