Almost Summertime Peach Pie

There are many ways to savor the flavor of summertime peaches, from canning sliced peaches to preserving peach salsas but a fan-favorite of Mrs. Blanche Weathers, First Lady of the South Carolina Department of Agriculture, is freezing them pre-prepped for her Almost Summertime Peach Pie.

Makes 1 pie

    Ingredients
  • 4 cups peeled and sliced peaches
  • 1¼ cup sugar
  • 2½ tablespoons tapioca starch
  • 1 tablespoon lemon juice
  • 2 batches pie dough
steps
  1. Toss peaches with sugar, tapioca starch, and lemon juice. Filling can be made ahead of time and frozen in a zip-top freezer bag.
  2. To assemble pie, preheat oven to 375 degrees and transfer peach mixture to a prepared crust (thawing first, if filling is frozen). Top with second crust and bake until crust is golden brown and filling is bubbling, about 1 hour.
