2 cups flour
11⁄2 teaspoons cinnamon
1 teaspoon ground ginger
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
3⁄4 cup brown sugar
1 tablespoon vanilla paste or extract 2 cups apple puree
3⁄4 cup oil
1⁄2 cup butter, softened
8 ounces cream cheese
3 cups confectioners’ sugar
1⁄2 teaspoon cinnamon
1⁄4 teaspoon ground nutmeg
1⁄4 teaspoon ground cardamom 1 teaspoon salt
Zest of 1 lemon

- Preheat oven to 325 degrees. In a medium bowl, combine flour, cinnamon, ginger, baking powder, baking soda, and salt. In bowl of a stand mixer fitted with whisk attachment, stir together eggs, brown sugar, and vanilla until fluffy and combined.
- Stir together apple puree and oil; add to egg mixture on low speed. Add dry ingredients and continue mixing, run- ning a spatula around sides and bottom of bowl to make sure everything is fully incorporated.
- Spray an 11×7 loaf pan with cooking spray. Pour batter into pan and bake for 25 to 30 minutes until a cake tester inserted in center comes out clean.
Make the Cream Cheese Frosting
- In bowl of a stand mixer fitted with paddle attachment, combine all ingredients and mix until smooth.
- Spread on top of loaf.
