Apple Spice Loaf Cake with Spiced Cream Cheese Frosting

This spiced loaf cake by Miller Union pastry chef Claudia Martinez pulls in fall flavors with cinnamon, ginger, apples, and a richly spiced cream cheese frosting. The result is a balance of tartness from the apples, robust and warming spices, and tangy cream cheese. The loaf cake recipe is straightforward enough to make during a weeknight evening, but you can use a piping bag to ice it for an eye-catching finish.

  • 2 cups flour
  • 11⁄2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 3⁄4 cup brown sugar
  • 1 tablespoon vanilla paste or extract 2 cups apple puree
  • 3⁄4 cup oil
  • spiced cream cheese frosting
  • 1⁄2 cup butter, softened
  • 8 ounces cream cheese
  • 3 cups confectioners’ sugar
  • 1⁄2 teaspoon cinnamon
  • 1⁄4 teaspoon ground nutmeg
  • 1⁄4 teaspoon ground cardamom 1 teaspoon salt
  • Zest of 1 lemon
  1. Preheat oven to 325 degrees. In a medium bowl, combine flour, cinnamon, ginger, baking powder, baking soda, and salt. In bowl of a stand mixer fitted with whisk attachment, stir together eggs, brown sugar, and vanilla until fluffy and combined.
  2. Stir together apple puree and oil; add to egg mixture on low speed. Add dry ingredients and continue mixing, run- ning a spatula around sides and bottom of bowl to make sure everything is fully incorporated.
  3. Spray an 11×7 loaf pan with cooking spray. Pour batter into pan and bake for 25 to 30 minutes until a cake tester inserted in center comes out clean.

For the Spiced Cream Cheese Frosting

  1. In bowl of a stand mixer fitted with paddle attachment, combine all ingredients and mix until smooth.
  2. Spread on top of loaf.
