Butter or nonstick cooking spray 3 ounces unsweetened chocolate, chopped
½ cup ghee
1¼ cups granulated sugar
2 large eggs
2 teaspoons vanilla extract
¾ teaspoon salt
⅔ cup all-purpose flour
Powdered sugar for dusting

- Preheat oven to 350 degrees. Line an 8×8-inch square baking pan with parchment paper or foil, extending it up two sides. Butter parchment or foil or spray with nonstick cooking spray.
- In a medium heatproof bowl set over gently simmering water, melt chocolate and ghee together until only a few unmelted bits remain. Remove from heat and stir until smooth and fully melted. (You can also do this in the microwave in 30-second bursts, stirring between each burst.)
- In the same bowl, whisk in sugar, then eggs, one at a time, then vanilla and salt. Using a spoon or flexible spatula, stir in flour until smooth, then scrape batter into prepared pan, spreading evenly. Bake for 25 to 30 minutes, or until a toothpick inserted into center comes out clean.
- Let cool and cut into 12 pieces. If desired, dust brownies with powdered sugar before serving.
