Brioche Buns

Celebrate the warmth of summer with these light and airy brioche buns that set the stage for perfect summer burger.

Makes 8 buns

    ingredients
  • 2¼ teaspoon active dry yeast
  • ¼ cup sugar
  • 2 tablespoons warm water
  • 3¼ cups flour
  • 1 teaspoon salt
  • 2 large eggs, divided
  • ½ cup warm milk
  • ½ cup butter, softened
  • Sesame seeds (optional)
steps
  1. In a small bowl, mix yeast, sugar, and warm water. Let sit for 5 to 10 minutes to activate yeast.
  2. Using a stand mixer fitted with a paddle attachment, combine flour, salt, yeast mixture, 1 egg, and warm milk. Add butter 1 tablespoon at a time and mix until a soft dough forms. Switch to a dough hook attachment and knead dough for 8 to 10 minutes, or until smooth. Place dough in a greased bowl, cover, and let rise until doubled in size, 1 to 1½ hours.
  3. Once risen, punch down dough, divide into 8 portions, and shape into buns. Place on a parchment-lined sheet and let rise for an additional 30 to 40 minutes.
  4.  Preheat oven to 375 degrees. In a small bowl, beat remaining egg with a fork. Brush buns with egg wash and sprinkle sesame seeds on top if using. Bake for 15 to 20 minutes until lightly golden. Let cool before slicing.
