2 teaspoons vanilla
½ cup flour
½ cup sugar
plus 1 tablespoon to finish

2-3 cups figs, halved,
2 tablespoons confectioners sugar (optional)

- Preheat oven to 400 degrees.
- Butter shallow 8- or 9-inch baking dish or cast-iron skillet.
- Combine eggs, buttermilk, vanilla, flour, 1/2 cup of sugar, and salt in blender and blend until smooth. Pour into prepared dish. Arrange figs in batter and sprinkle top with remaining sugar.
- Bake for 45 minutes or until puffed and golden. Cool and sprinkle with confectioners sugar to serve
