2 cups

  • 2 pounds heirloom of any cherry tomato
  • use a few varietals–color is magic
  • 1 lemon, zest and juice reserved
  • ½ cup brown sugar
  • ¾ cup granulated sugar
  • ½ cup water
  • Pinch of good sea salt
  • 2 turns freshly ground pepper
  1. Combine all ingredients except zest in a stainless steel saucepan and simmer on low heat for 30 minutes, stirring occasionally until tomatoes have “popped.”
  2. Raise to high heat, stirring constantly, and reduce the mixture to a thick consistency, about 10 minutes. Remove from heat, stir in zest, and cool completely.
  3. Store in a container with a tight-fitting lid for 2 weeks in the refrigerator. Put it on everything!
