2 pounds heirloom of any cherry tomato
use a few varietals–color is magic
1 lemon, zest and juice reserved
½ cup brown sugar
¾ cup granulated sugar
½ cup water
Pinch of good sea salt
2 turns freshly ground pepper
- Combine all ingredients except zest in a stainless steel saucepan and simmer on low heat for 30 minutes, stirring occasionally until tomatoes have “popped.”
- Raise to high heat, stirring constantly, and reduce the mixture to a thick consistency, about 10 minutes. Remove from heat, stir in zest, and cool completely.
- Store in a container with a tight-fitting lid for 2 weeks in the refrigerator. Put it on everything!
