Dallas restaurateur Hedda Gioia Dowd grew up in France and fondly recalls her grandmother preparing it for her each morning. Today, she serves a classic chocolat chaud at her restaurant, rise n˚1, and never misses a chance to indulge herself. “It could be 102 degrees out and I still drink hot chocolate. It’s my way of staying in touch with my grandmother.”

4 cups whole milk
½ cup bittersweet chocolate morsels
Sugar to taste
Whipped cream (optional)

- Add milk to medium saucepan set over medium heat, and cook until it begins to boil, stirring constantly.
- Add chocolate and stir until well incorporated, then add sugar. Continue mixing until sugar is dissolved.
- Pour mixture into hot mugs, and top with whipped cream.
