Chocolate Strawberry Cobbler from Potluck Desserts

I used to think of cobbler as a straightforward vanilla buttery batter affair, but that all changed when a friend brought his chocolate strawberry cobbler to a party. His version was like a molten lava cake with syrupy strawberries instead of oozing hot fudge in the center. The chocolate was dark, not overly sweet, and incredibly rich. The fresh strawberries added a bright contrast, balancing out the richness per-fectly. It was my first real lesson in how balance can elevate a dessert. This recipe aims for the same balance- decadent dark chocolate topping paired with a bright, slightly sweet strawberry center, creating a sensation reminiscent of indulging in a chocolate-covered strawberry. Serve with vanilla ice cream or lightly sweetened whipped cream.

Serves 10-12

    For the strawberries
  • 1½ pounds strawberries (about 4 cups), hulled and sliced
  • ½ cup sugar
  • 3 tablespoons cornstarch
  • ½ teaspoon vanilla extract
  • For the topping
  • 1 cup flour
  • ½ cup sugar
  • ¼ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup whole milk
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ cup dark chocolate chips

  1. Preheat your oven to 350 and butter a 9-inch casserole dish. Set aside.
  2. In a medium bowl, add the strawberries, sugar, corn-starch, and vanilla. Toss with your hands until evenly combined and the strawberries are coated. Pour into the prepared dish and spread into an even layer.
  3. Prepare the topping. In a separate medium bowl, whisk together the flour, sugar, cocoa powder. baking powder. and salt until evenly combined. Make a well in the center of the dry ingredients. Add the milk, butter, and vanilla to the center of the well and whisk until evenly com-bined. Fold in the chocolate chips.
  4. Pour the topping over the strawberries and spread slightly in an even layer. Bake for 20 to 30 minutes, or until the strawberries are bubbling and the topping looks dry. Serve warm or room temperature.
