yields

about 15 servings

    Ingredients
  • 1 tablespoon canola oil
  • 1 medium sweet onion
  • 1 small shallot, chopped (about 2 tablespoons)
  • 3 cups fresh cranberries
  • 1 pound Granny Smith apples (about 2 medium), peeled, cored, and cut into small cubes
  • 1 pound Golden Delicious apples (about 2 medium), peeled, cored, and cut into small cubes
  • ¾ cup brown sugar
  • ½ cup chopped dried figs
  • 1 ½ tablespoons apple cider vinegar

steps
  1. Heat oil in a large saucepan set over medium-high heat. Add onion and shallots and cook until beginning to brown, about 5 minutes.
  2. Stir in cranberries, apples, brown sugar, figs, and vinegar. Cook, stirring constantly, until mixture begins to boil and moisture is released, about 5 minutes.
  3. Reduce heat to low, cover, and simmer for 20 minutes, occasionally stirring, until apples are tender. Cool to room temperature before serving.
