3 cups

  • 1 12-ounce bag fresh or frozen cranberries
  • 10 kumquats, minced without seeds (or1 small orange, peeled, seeds removed, and chopped fine)
  • 1 cup sugar
  • ¼ cup minced crystallized ginger
  • Pinch of salt
  1. Place all ingredients in a medium pot and put on low heat.
  2. Cook until sugar is dissolved and you reach the desired consistency (about 30 – 40 minutes).
