1 12-ounce bag fresh or frozen cranberries
10 kumquats, minced without seeds (or1 small orange, peeled, seeds removed, and chopped fine)
1 cup sugar
¼ cup minced crystallized ginger
Pinch of salt
- Place all ingredients in a medium pot and put on low heat.
- Cook until sugar is dissolved and you reach the desired consistency (about 30 – 40 minutes).
