1 pound filet beans, ends trimmed
16 medium shrimp (about 8 ounces), peeled
Citrus marinade (recipe follows)
12 orange segments
Salt to taste
Citrus Marinade
1 small shallot, minced
1 small garlic clove, minced
1 teaspoon orange zest
2 tablespoons freshly squeezed orange juice
4 tablespoons champagne vinegar
½ teaspoon crushed red pepper
1 teaspoon minced parsley
6 tablespoons olive oil
1 teaspoon salt

- Bring a large pot of salted water to a boil. Prepare an ice bath. Add filet beans to boiling water and cook for about 1 minute, until tender. Use a slotted spoon to remove beans from boiling water and transfer to ice bath.
- When water returns to a boil, add shrimp and cook until just done, about 45 seconds, then remove from boiling water and add to ice bath. Drain beans and shrimp.
- Slice shrimp in half lengthwise. In a mixing bowl, toss beans and shrimp with citrus marinade and orange segments. Season with salt to taste. Let sit a few hours before serving.
Citrus Marinade
Add all ingredients to a bowl and whisk to emulsify.
