Oil for the grill
1 cup brown sugar
2 teaspoon cinnamon
¼ teaspoon cayenne
1 pineapple, peeled, cored, and cut into 6 rings
Prepare a charcoal grill for medium-high heat.
Grill pineapple slices before dinner and serve at room temperature or keep them warm in a very low oven until you’re ready to serve.
In a medium bowl, mix brown sugar, cinnamon, and cayenne. Add pineapple rings, one at a time, and toss to coat. Oil grates and grill pineapple rings for 2 to 3 minutes per side. Serve each ring with a scoop of rum raisin ice cream.
