3 tablespoons olive oil
4 thyme sprigs
4 garlic cloves Pinch of red pepper flakes
1 pound mushrooms, sliced
4 slices rustic bread
1-2 tablespoons dry sherry
3 tablespoons sour cream

- In a large skillet, heat olive oil with thyme leaves, garlic, and red pepper flakes over medium-low heat until fragrant. Add mushrooms and cook until browned, 10 minutes.
- Meanwhile, toast bread; remove cooked garlic cloves from skillet, rub 1 clove over each piece of toast, and set aside. Add sherry to mushrooms and cook 2 minutes, then lower heat and stir in sour cream, cooking 1 minute. Spoon over toast and serve immediately.
