  • 2 big filets (about 4 pounds total) of grouper, cleaned
  • 4 baking potatoes, peeled, boiled, and sliced thin
  • 4 ounces of butter (one stick), sliced
  • Fresh garlic, pressed
  • Salt and pepper to taste
  1. Preheat oven to 350 degrees.
  2. Arrange the filets in a big baking pan. Cover with slices of butter and fresh garlic. Salt and pepper lightly.
  3. Place in oven for 30 minutes. Take the fish out of the oven and arrange the potato slices like scales on top of the fish. Salt and pepper the potatoes lightly. Return fish and potatoes to the oven and cook until potatoes are a golden brown, about 15 minutes. Serve hot.
