Party Tea Sandwiches

Cucumber, pimento cheese, and ham tea sandwiches

Make your Derby party a refined event with these teeny finger sandwiches that combine elements of the two classics: cucumber and pimento cheese-and-ham. Turn them into a double-decker sandwich, but slice them into little logs for easy eating.

Makes 24 sandwiches

    Ingredients
  • 1 cup pimento cheese
  • 1 cup mayonnaise
  • 4 English cucumbers, divided
  • 8 ounces country ham, diced
  • Salt and pepper, to taste
  • 1 loaf pre-sliced cocktail bread
  • 8 green olives with pimento, for garnish
steps
  1. Combine pimento cheese, mayonnaise, and 1 seeded and diced cucumber in bowl of food processor. Blend until smooth. 
  2. Transfer to small mixing bowl and fold in 1 seeded and diced cucumber and country ham. Season to taste with salt and pepper.
  3. Assemble double-decker ham salad sandwiches by layering bread, ham salad, bread, ham salad, bread. Thinly slice remaining cucumbers and place a slice and an olive atop each sandwich with a toothpick.
